• Weir squid salad, preserved local chilis
• Skate cheek fritters, saffron aioli
• Smoked steelhead trout dip, trout roe, brioche, buckwheat blini
• Tajarin, Maine uni, lemon, basil
• Roasted lobster, coral sauce, Peter Wilcox potato, Brussels sprouts
