Cooking Technique Series – Seafood Boot Camp at Culinary Institute of America

January 28 - 29, 2019

This 2-day class explores seafood varieties that support a healthier, more sustainable lifestyle, like salmon, scallops, mussels, crab, monkfish, and cod. Using a variety of cooking methods, discover preparations from Spain, France, and China, including serious traditional preparations of the accompaniments that make these cuisines delicious. This exciting new class expands on the techniques learned in our Culinary Boot Camp - Basic Training and is for serious food enthusiasts and culinary professionals alike. The class focuses on specific dishes and ingredients, and the cooking methods used to prepare them. We suggest students interested in the Cooking Techniques Series complete Basic Training first.
